This is a surefire way to get your kids to eat broccoli…and adults too. I cook it gyoza style; that is pan frying and then steaming. It generates wonderfully caramelised flavour whilst having a great texture. To cheek it up a bit add some Greek yoghurt and tahini when cooked. All the background and method is in the video. I’ve written down the ingredients and method below.
Broccoli Cooked Gyoza Style with Yoghurt and Tahini
Ingredients
Two heads of broccoli
A glug of olive oil
2 pinches of sea salt
1 pinch of chilli flakes (optional)
A drizzle of Greek yoghurt
A drizzle of tahini
Method
You’ll need a frying pan with a good fitting lid, sea salt, 2 tablespoons of olive oil, and some chilli flakes (optional)
Cut the broccoli in to good sized florets. Put the pan on medium heat and add the olive oil. Once hot add the broccoli, a pinch or two of sea salt and the chilli flakes if using. Now toss that broccoli around until it caramelises. Now grab 2 tablespoons of water and add it to the broccoli – immediately put the lid on as it sizzles and turn the heat down to low/medium. Shake the broccoli around for a while and cook like this for about 5 minutes – until the broccoli gives way to a little poke with a knife but still has a little resistance.
Serve immediately. If you’re being a bit cheeky you can drizzle over some greek yogurt and tahini. It’s great to eat as a snack or as a side dish. Irrespective your kids will love it…and so will you.
